This preparation allows the full structure of the black tea to emerge while carrying the brightness of bergamot and the warmth of osmanthus with clarity. 

*Using higher water temperatures or extending the infusion time will increase tannin extraction, introducing bitterness. Lower water temperatures or shorter infusions will limit extraction, resulting in a flatter cup and muting the blend’s layered warmth and structure.

Cold brewing softens the bergamot and emphasizes the tea’s honeyed and floral qualities, producing a smooth, rounded cup with reduced astringency. The result is mellow yet expressive, with a gentle citrus presence and a refined, lingering warmth.

Earl D’Or is the flavor interpretation of a Baroque vision that fuses physical intensity with transcendence. The blend was created in direct homage to The Ecstasy of Saint Teresa (1647–52) by Gian Lorenzo Bernini, a work that captures the moment when the divine interrupts the material world.

In her writings, Saint Teresa of Ávila describes a vision in which an angel pierces her heart with a fiery spear, producing an overwhelming experience of spiritual ecstasy. Bernini renders this moment with radical physicality. Teresa’s body softens and yields in rapture, her expression suspended between pain and pleasure, while the angel holds the spear with quiet gentleness. Above them, gilded rays descend from a hidden window, transforming stone into light and turning the chapel into a threshold between heaven and flesh.

The sculpture does not depict serenity or restraint. It stages intensity held in balance, where sharp force and radiant softness coexist. Ecstasy here is not abstract or distant, but embodied, luminous, and charged with tension.

That sensibility shapes Earl D’Or. The dramatic contrast at the heart of Bernini’s work is translated directly into flavor. Bergamot enters as the bright, incisive strike, vivid and penetrating, echoing the spear’s sudden intensity. Osmanthus follows with a warm, honeyed floral sweetness that softens the citrus into a golden harmony, mirroring the descent of light across marble. Beneath this interplay, black tea provides the grounding structure, a steady and dark foundation that anchors the experience.

This translation reflects the architecture of the sculpture itself. Just as Bernini relies on contrast to produce transcendence, Earl D’Or is composed through tension and release. Brightness gives way to warmth. Intensity yields to surrender. The blend does not seek delicacy, but balance, allowing richness and clarity to exist side by side.

Earl D’Or is not a quiet meditation, but a measured one. A modern interpretation of Earl Grey shaped by Baroque logic, where sensation is elevated through structure, and where radiance emerges most fully when held against depth.
